While I always opted for something creamy like vanilla or chocolate, I have distinct memories of my cousin always reaching for something fruit flavored and her absolute favorite was watermelon sherbet.


The healthiest and lowest calorie option is reaching for plain or vanilla yogurt. You can use regular or Greek yogurt, but I find the regular yogurt works best since has a little more liquid and blends into the watermelon more.


When ready to make, add half the watermelon to the food processor and blend until smooth. Scrape down the sides and add the yogurt, coconut milk, or condensed milk. Add the remaining watermelon and blend until smooth and creamy.


The combination of cashews and almond milk make a very subtle creaminess that blends wonderfully with the sweetness from the honey, watermelon, and the touch of vanilla. The salt amplifies the flavours in the ice cream and is totally optional.
